Ingredients
  

  • Base
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • Filling
  • 1 packet taco seasoning
  • 1 tsp cumin
  • 1 can diced tomatoes 15 oz
  • 1 can tomato sauce 15 oz
  • 1 can black beans 15 oz
  • 1 can kidney beans 15 oz
  • 1 cup corn
  • 3 cups beef broth
  • ½ tsp salt
  • ½ tsp black pepper
  • Topping
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup crushed tortilla chips
  • 2 tbsp chopped cilantro

Method
 

  1. Heat olive oil in a pot and brown the ground beef.
  2. Add onion and cook until soft, then stir in garlic.
  3. Mix in taco seasoning, cumin, tomatoes, and tomato sauce.
  4. Add beans, corn, and broth, then simmer for 15–20 minutes.
  5. Serve hot with cheese, sour cream, tortilla chips, and cilantro.

Notes

  • Store leftovers in the fridge for up to 4 days.
  • Freeze for up to 3 months.
  • Add jalapeños if you prefer a spicier soup.
  • Ground turkey works well as a lighter substitute.
