Ingredients
  

  • Soup Base
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • Soup
  • 4 cups beef broth
  • 1 can 14 oz crushed tomatoes
  • 1 can 14 oz diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 8 lasagna noodles broken
  • Cheese Topping
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley

Method
 

  1. Heat olive oil in a large pot and cook ground beef until browned.
  2. Add onion and cook until soft, then stir in garlic.
  3. Pour in broth, tomatoes, tomato paste, and seasonings. Bring to a simmer.
  4. Add broken lasagna noodles and cook until tender.
  5. Serve hot topped with ricotta, mozzarella, and Parmesan cheese.

Notes

  • Cook noodles until just tender to avoid mushy texture.
  • Add extra broth if the soup becomes too thick.
  • Freeze the soup without noodles for best results.
  • Use freshly grated cheese for richer flavor.
