Ingredients
  

  • Base
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 garlic cloves minced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • Vegetables
  • 2 potatoes diced
  • 1 cup green beans
  • 1 cup mushrooms
  • 1 can diced tomatoes
  • Broth
  • 4 cups vegetable broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp salt
  • ½ tsp pepper
  • Finish
  • 1 cup white beans
  • 2 tbsp parsley

Method
 

  1. Heat olive oil and sauté onion, garlic, carrots, and celery.
  2. Add potatoes, mushrooms, and green beans.
  3. Pour in tomatoes and vegetable broth.
  4. Season with herbs and simmer until vegetables are tender.
  5. Stir in beans and cook for a few more minutes.

Notes

  • Store in the refrigerator for up to 4 days.
  • Freeze for up to 3 months.
  • Add chicken or sausage for a heartier version.
