Ingredients
  

  • Salad Base
  • 5 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • ½ cup shredded carrots
  • ½ red onion thinly sliced
  • Protein
  • 2 cups grilled chicken breast sliced
  • 1 boiled egg sliced
  • ½ cup chickpeas
  • Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Wash and dry the salad greens thoroughly.
  2. Slice the vegetables and place them in a large bowl with the greens.
  3. Add grilled chicken, boiled egg, and chickpeas on top.
  4. Whisk together olive oil, lemon juice, honey, salt, and pepper to make the dressing.
  5. Drizzle the dressing over the salad and toss gently before serving.
