  • For the Base
  • 1 cup rice or quinoa
  • 1 cup water
  • ½ tsp salt
  • For Toppings
  • 1 cup cucumber
  • 1 cup cherry tomatoes
  • ½ cup carrots
  • ½ avocado
  • For Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp honey
  • Salt & pepper

Method
