Ingredients
  

  • Base:
  • 2 cups whole wheat pasta
  • 1 teaspoon salt
  • Filling:
  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • ½ cup bell pepper
  • ½ cup corn
  • ¼ cup onion
  • ¼ cup olives
  • Dressing:
  • ½ cup Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tbsp parsley

Method
 

  1. Cook pasta until tender, then cool.
  2. Chop all vegetables.
  3. Mix dressing ingredients until smooth.
  4. Combine pasta, veggies, and dressing.
  5. Chill for 30 minutes and serve.
