Ingredients
  

  • Base
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • Soup
  • 4 cups beef broth
  • 2 cups diced potatoes
  • 1 cup carrots sliced
  • 1 cup celery chopped
  • 1 can diced tomatoes
  • 1 cup corn kernels
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • Topping
  • 2 tablespoons chopped parsley
  • ½ cup shredded cheddar cheese optional

Method
 

  1. Heat olive oil in a large pot and brown the ground beef.
  2. Add onion and garlic, cooking until fragrant.
  3. Stir in potatoes, carrots, celery, tomatoes, and broth.
  4. Season with herbs, salt, and pepper, then simmer until vegetables are tender.
  5. Add corn, heat through, garnish, and serve warm.

  • Store leftovers in the refrigerator for up to 4 days.
  • Freeze cooled soup for up to 3 months.
