Ingredients
  

  • For the Grilled Cheese
  • 8 slices bread
  • 4 tbsp butter
  • 8 slices cheddar cheese
  • For the Tomato Soup
  • 2 cups tomatoes
  • 1 small onion
  • 2 cloves garlic
  • 2 tbsp butter or oil
  • 2 cups vegetable broth
  • ½ cup cream
  • 1 tsp sugar
  • Salt & pepper
  • For the Topping
  • Fresh basil optional
  • Croutons optional

Method
 

  1. Sauté onions and garlic in butter until soft.
  2. Add tomatoes and broth, simmer until thick.
  3. Blend soup until smooth, then add cream and seasoning.
  4. Butter bread, add cheese, and grill until golden.
  5. Slice sandwich and serve hot with soup.
