Ingredients
  

  • Base
  • 2 cups cooked rice or quinoa
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • Filling
  • 1 cup diced chicken tofu, or chickpeas
  • 1 cup broccoli florets
  • 1 cup bell peppers
  • 1 zucchini chopped
  • Topping / Sauce
  • ½ cup chicken or vegetable broth gluten-free
  • 2 tablespoons tamari or gluten-free soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon garlic
  • ½ teaspoon black pepper
  • 2 tablespoons green onions
  • 1 teaspoon sesame seeds
  • 1 teaspoon lemon juice

Method
 

  1. Heat olive oil in a skillet and cook the protein until browned.
  2. Add broccoli, peppers, and zucchini and cook until tender.
  3. Stir in garlic and cook briefly until fragrant.
  4. Add broth, tamari, and honey, letting the sauce simmer.
  5. Mix in cooked rice and toss everything together.
  6. Garnish with green onions, sesame seeds, and lemon juice.
