Ingredients
  

  • Base
  • 3 cups romaine lettuce chopped
  • 1 cup cucumber sliced
  • ¾ cup cherry tomatoes halved
  • ½ cup red bell pepper diced
  • ¼ cup red onion thinly sliced
  • Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Toppings
  • ¼ cup feta cheese crumbled
  • 2 tablespoons sunflower seeds
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Wash and dry all vegetables thoroughly.
  2. Chop lettuce and slice cucumbers and tomatoes.
  3. Whisk the dressing ingredients in a small bowl.
  4. Combine vegetables in a large bowl.
  5. Add dressing, toss gently, and sprinkle toppings before serving.
