Ingredients
  

  • Base
  • 2 cups pasta
  • 1 teaspoon salt
  • Filling
  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • ½ cup onion
  • ½ cup bell peppers
  • ½ cup corn
  • Topping / Dressing
  • ½ cup mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp mustard
  • 1 tsp garlic powder
  • ½ tsp pepper
  • ½ tsp salt
  • 1 tsp oregano
  • ¼ cup cheese
  • 2 tbsp parsley

Method
 

  1. Cook pasta until tender, then cool completely.
  2. Chop vegetables into small pieces.
  3. Mix dressing ingredients until smooth.
  4. Combine pasta, vegetables, and dressing.
  5. Chill before serving.

Notes

 
  • Store in fridge up to 3 days
  • Add extra dressing if needed after chilling
  • Swap mayo for yogurt for lighter version
  • Best served cold
