Ingredients
  

  • Base
  • 1 lb ground beef or shredded chicken
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • Filling
  • 1 cup black beans drained
  • 1 cup corn kernels
  • 1 tablespoon taco seasoning
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • Topping
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream
  • ½ cup salsa
  • ¼ cup chopped cilantro
  • 1 avocado sliced (optional)

Method
 

  1. Heat olive oil in a skillet and cook the ground beef until browned.
  2. Add onion and garlic and cook until soft.
  3. Stir in taco seasoning, cumin, chili powder, beans, and corn.
  4. Add cooked rice and mix until well combined.
  5. Sprinkle cheese on top and allow it to melt.
  6. Serve with salsa, sour cream, cilantro, and avocado.

Notes

  • Store leftovers in the refrigerator for up to 4 days.
  • Ground turkey or chicken can replace beef.
  • Add jalapeños or hot sauce for extra heat.
  • A splash of broth helps when reheating.
