Ingredients

  • 3 cups cooked rotini pasta
  • 1 cup cherry tomatoes

  • Dressing
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Topping
  • ½ cup mozzarella cheese cubes
  • 2 tablespoons parsley

Method
 

  1. Cook pasta and allow it to cool.
  2. Chop vegetables evenly.
  3. Mix dressing ingredients in a bowl.
  4. Combine pasta and vegetables.
  5. Toss with dressing and add toppings.
