Ingredients
  

  • Base
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 pound ground beef or turkey
  • Filling
  • 1 can 15 oz black beans
  • 1 can 15 oz kidney beans
  • 1 can 15 oz corn
  • 1 can 14 oz diced tomatoes
  • 1 can 10 oz tomatoes with green chilies
  • 3 cups beef or chicken broth
  • Seasoning
  • 2 tablespoons taco seasoning
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Method
 

  1. Heat olive oil in a large pot and sauté onions until soft.
  2. Add garlic and cook until fragrant.
  3. Add ground meat and cook until browned.
  4. Stir in beans, corn, and tomatoes.
  5. Pour in broth and seasonings and mix well.
  6. Simmer for 20–25 minutes until flavors blend.
  7. Let cool slightly and serve with toppings.

Notes

  • Soup thickens as it cools. Add broth if needed.
  • Store leftovers in the refrigerator up to 4 days.
  • Freeze in airtight containers for up to 3 months.
  • Ground turkey works as a lighter substitute.
