Ingredients
  

  • Base
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • ½ cup red onion diced
  • 1 cup black beans rinsed
  • 1 cup corn kernels
  • Filling Taco Meat
  • 1 lb ground beef
  • 1 tablespoon taco seasoning
  • ¼ cup water
  • Creamy Dressing
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 tablespoon lime juice
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • Toppings
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • ½ cup diced avocado
  • ¼ cup cilantro chopped

Method
 

  1. Cook ground beef until browned.
  2. Add taco seasoning and simmer briefly.
  3. Chop lettuce and vegetables.
  4. Mix dressing ingredients in a bowl.
  5. Combine salad base and taco meat.
  6. Top with cheese, chips, and dressing.

Notes

Add tortilla chips just before serving.
• Greek yogurt can replace sour cream.
• Store salad and toppings separately.
• Add avocado for extra creaminess.
