Ingredients
  

  • Base
  • 4 large flour tortillas
  • 2 tablespoons vegetable oil
  • Filling
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1/2 cup water
  • 1 cup refried beans
  • 1/2 cup diced onions
  • Topping
  • 1/2 cup enchilada sauce
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup diced tomatoes
  • 2 tablespoons sliced black olives
  • 2 tablespoons chopped green onions

Method
 

  1. Heat oil in a skillet and lightly fry tortillas until golden and crisp.
  2. Cook ground beef in a pan until browned. Add taco seasoning and water, then simmer until thickened.
  3. Spread refried beans on one tortilla and add the beef mixture.
  4. Place another tortilla on top and spread enchilada sauce.
  5. Sprinkle cheese evenly and bake at 375°F (190°C) for about 10 minutes.
  6. Add tomatoes, olives, and green onions before slicing.

Notes

Crisp tortillas first to prevent soggy layers.
