Ingredients
  

  • For the Chicken
  • 2 lbs boneless skinless chicken thighs or breasts
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 4 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • For the Marinade Flavor Boost
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon zest
  • ½ teaspoon onion powder
  • For Garnish and Serving
  • 2 tablespoons chopped fresh parsley
  • ½ cup crumbled feta cheese optional
  • Lemon wedges for serving

Method
 

  1. In a bowl, whisk olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, pepper, vinegar, and lemon zest.
  2. Coat the chicken with the marinade and let it rest for at least 30 minutes.
  3. Preheat oven to 400°F and place chicken in a baking dish.
  4. Bake for 25–30 minutes until golden and cooked through.
  5. Rest the chicken for 5 minutes then garnish with parsley and feta before serving.

Notes

  • Store leftovers in the refrigerator for up to 4 days.
  • Chicken thighs stay juicier than breasts.
  • Add vegetables to the baking dish for a full meal.
  • Greek yogurt can be served on the side for extra creaminess.
