  • 2 cups fresh cucumbers thinly sliced
  • ½ cup red onion thinly sliced
  • Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh Herbs
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon fresh parsley chopped
  • Optional Add-Ins
  • ½ cup cherry tomatoes halved
  • ¼ cup feta cheese crumbled
  • 1 tablespoon sesame seeds

Method
 

  1. Thinly slice cucumbers and onions and place them in a large bowl.
  2. Whisk olive oil, vinegar, lemon juice, honey, salt, and pepper until smooth.
  3. Pour the dressing over the vegetables and toss gently.
  4. Add fresh herbs and optional toppings.
  5. Chill the salad for 15–20 minutes before serving.

Notes

Best served chilled for maximum freshness.
Do not freeze as cucumbers lose their crisp texture.
Add avocado or chickpeas for extra variety.
Adjust vinegar or lemon juice to taste.
