Ingredients

  • For the Chicken
  • 2 lbs chicken thighs or drumsticks
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • For the BBQ Sauce
  • 1 cup barbecue sauce
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce
  • ½ tsp chili powder
  • 2 x
  • Double all ingredients.
  • 3 x
  • Triple all ingredients.

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Pat chicken dry and season with oil, salt, pepper, garlic powder, and paprika.
  3. Mix barbecue sauce, honey, vinegar, brown sugar, Worcestershire sauce, and chili powder.
  4. Bake chicken for 20 minutes, then brush with sauce.
  5. Bake another 20–25 minutes until caramelized and fully cooked.

Notes

  • Store leftovers in the fridge for up to 4 days.
  • Freeze cooked chicken for up to 2 months.
  • Add extra sauce during the final baking stage for a stronger glaze.
  • Boneless chicken can be used with slightly reduced cooking time.
