  • 3 zucchini
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • Filling / Flavoring
  • 2 garlic cloves minced
  • 1 tsp oregano
  • 1 tsp thyme
  • ½ tsp paprika
  • Topping
  • ¼ cup Parmesan cheese
  • 1 tbsp lemon juice
  • Fresh parsley

Method
 

  1. Slice zucchini evenly.
  2. Toss with oil, garlic, and seasonings.
  3. Preheat grill or pan.
  4. Grill 3–4 minutes per side until golden.
  5. Add toppings and serve warm.
