Ingredients
  

  • Base
  • 3 medium zucchini sliced lengthwise
  • 2 tablespoons olive oil
  • Seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Topping Optional
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped parsley
  • 1 teaspoon lemon juice

Method
 

  1. Wash and slice the zucchini into ½-inch thick strips.
  2. Toss the slices with olive oil, salt, pepper, garlic powder, and Italian seasoning.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Place zucchini slices on the grill and cook 3–4 minutes per side.
  5. Remove once tender with golden grill marks.
  6. Sprinkle with Parmesan, parsley, and lemon juice before serving.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • Avoid overcooking to keep zucchini tender rather than mushy.
  • Parmesan topping can be replaced with feta cheese.
  • For extra flavor, add chili flakes or balsamic glaze.
