Ingredients
  

  • Base
  • 4 cups romaine lettuce chopped
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • ½ red onion thinly sliced
  • 1 avocado diced
  • Chicken
  • 2 boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Dressing
  • ¼ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Method
 

  1. Brush chicken with olive oil and season with spices.
  2. Grill chicken over medium heat for 6–7 minutes per side.
  3. Let chicken rest for 5 minutes before slicing.
  4. Combine lettuce, vegetables, and avocado in a large bowl.
  5. Add sliced grilled chicken and drizzle with dressing before serving.

  • Keep dressing separate until serving for crisp greens.
  • Substitute grilled shrimp or tofu if desired.
