Ingredients
  

  • Base
  • 1 cup quinoa cooked
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion diced
  • Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Topping
  • 2 tablespoons parsley chopped
  • ¼ cup feta cheese optional

Method
 

  1. Cook quinoa and allow it to cool.
  2. Dice cucumber, tomatoes, and onion.
  3. Mix dressing ingredients in a bowl.
  4. Combine quinoa and vegetables.
  5. Toss with dressing and add toppings.

Notes

Rinse quinoa before cooking for better flavor.
 Add avocado for extra creaminess.
