Ingredients
  

  • Base
  • cups cooked orzo pasta
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes
  • Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Topping
  • ¼ cup feta cheese
  • 2 tablespoons parsley

Method
 

  1. Cook the orzo pasta and allow it to cool.
  2. Dice cucumber and slice tomatoes.
  3. Mix dressing ingredients in a bowl.
  4. Combine pasta and vegetables.
  5. Toss with dressing and add toppings.
