Ingredients

  • 3 cups cucumbers sliced
  • 2 cups cherry tomatoes halved
  • ½ cup red onion sliced
  • ½ cup Kalamata olives
  • Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Topping
  • ½ cup feta cheese crumbled

Method
 

  1. Slice cucumbers and halve tomatoes.
  2. Thinly slice red onion.
  3. Mix vegetables and olives in a bowl.
  4. Whisk dressing ingredients together.
  5. Toss salad with dressing.
  6. Add feta cheese and serve.
