Ingredients
  

  • Base
  • 2 cups cucumbers sliced
  • 2 cups cherry tomatoes halved
  • ¼ cup red onion sliced
  • Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • Topping
  • 2 tablespoons parsley chopped
  • 1 tablespoon fresh dill optional

Method
 

  1. Wash and slice cucumbers and tomatoes.
  2. Thinly slice the red onion.
  3. Mix dressing ingredients in a small bowl.
  4. Combine vegetables in a large bowl.
  5. Toss with dressing and add herbs before serving.

Notes

Use fresh vegetables for the best flavor.
 Add dressing just before serving.
 Store leftovers in the refrigerator.
Feta cheese can be added for extra flavor.
