Ingredients
  

  • Base
  • 2 cups corn kernels
  • 1 cup cherry tomatoes
  • 1 cup cucumber diced
  • ½ cup bell pepper
  • Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • Topping
  • 2 tablespoons parsley
  • ¼ cup feta cheese

Method
 

  1. Cook or prepare corn kernels.
  2. Dice vegetables evenly.
  3. Mix dressing ingredients in a bowl.
  4. Combine corn and vegetables.
  5. Toss with dressing and add toppings.

Notes

Fresh corn gives the best flavor.
 Add dressing just before serving.
Store leftovers in the refrigerator.
Add avocado for extra creaminess.
