Ingredients
  

  • 2 lbs beef chuck roast cut into 1½-inch cubes
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • For the Vegetables
  • 4 medium carrots sliced
  • 3 medium potatoes peeled and cubed
  • 2 celery stalks sliced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • For the Stew Broth
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 teaspoon paprika

Method
 

  1. Season and lightly coat beef cubes with flour.
  2. Brown the beef in a skillet with olive oil.
  3. Add vegetables to the crockpot and place beef on top.
  4. Pour in broth and seasonings.
  5. Cook on low for 7–8 hours until beef is tender.

Notes

  • Use chuck roast for the best tender texture.
  • Add peas or mushrooms during the last hour.
  • Store leftovers in the fridge for up to 4 days.
  • Freeze stew for up to 3 months.
