Ingredients
  

  • Base
  • 2 cups cooked pasta or rice
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • Filling
  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 cup mixed vegetables
  • Topping / Sauce
  • ½ cup vegetable or chicken broth
  • ½ cup cream or milk
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ cup parmesan cheese
  • 2 tablespoons parsley

Method
 

  1. Heat olive oil in a skillet and cook chopped onions until soft.
  2. Add garlic and vegetables, cooking until slightly tender.
  3. Stir in salt, pepper, and Italian seasoning.
  4. Pour in broth and cream, simmering until the sauce thickens slightly.
  5. Add cooked pasta or rice and toss until coated.
  6. Sprinkle parmesan and parsley before serving.

Notes

  • Store leftovers in the fridge for 3 days.
  • Freeze portions for 2 months.
