Ingredients
  

  • Base
  • 1 tbsp olive oil | 2 tbsp | 3 tbsp
  • 1 medium onion diced | 2 onions | 3 onions
  • 3 cloves garlic minced | 6 cloves | 9 cloves
  • 500 g 1 lb ground beef or sausage | 1 kg | 1.5 kg
  • 2 tbsp tomato paste | 4 tbsp | 6 tbsp
  • Filling
  • 800 g 28 oz crushed tomatoes | 1600g | 2400g
  • 4 cups 960 ml chicken or beef broth | 8 cups | 12 cups
  • 1 tbsp Italian seasoning | 2 tbsp | 3 tbsp
  • 8 lasagna noodles broken into pieces | 16 noodles | 24 noodles
  • 1 tsp salt adjust to taste | 2 tsp | 3 tsp
  • ½ tsp black pepper | 1 tsp | 1½ tsp
  • Topping
  • 1 cup 250g ricotta cheese | 2 cups | 3 cups
  • 1 cup 120g shredded mozzarella | 2 cups | 3 cups
  • ½ cup 50g grated Parmesan | 1 cup | 1½ cups
  • 2 tbsp fresh basil or parsley chopped | 4 tbsp | 6 tbsp

Method
 

  1. Heat oil and sauté onion and garlic until soft and fragrant.
  2. Add meat and cook until browned and fully cooked.
  3. Stir in tomatoes, broth, and seasoning, then simmer gently.
  4. Add broken lasagna noodles and cook until tender.
  5. Turn off heat and stir in cheeses until creamy and melted.

Notes

  • Add extra broth if the soup thickens too much.
  • Store without pasta for best reheating texture.
  • Use fresh herbs for brighter flavor.
  • Great for meal prep and freezing.
