Ingredients
  

  • Pasta Base
  • 12 oz whole-wheat pasta
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • Sauce
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes
  • 1 cup spinach
  • ½ cup Greek yogurt or light cream
  • ¼ cup parmesan cheese
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • Topping
  • 2 tablespoons parmesan cheese
  • 1 tablespoon chopped parsley
  • Chili flakes optional

Method
 

  1. Cook pasta in salted boiling water until tender.
  2. Heat olive oil in a pan and sauté garlic until fragrant.
  3. Add tomatoes and spinach and cook until softened.
  4. Stir in yogurt or cream with parmesan and seasonings.
  5. Toss pasta with the sauce and garnish with parsley and cheese.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • Add a splash of pasta water if the sauce becomes too thick.
  • Protein like chicken, shrimp, or chickpeas can be added.
  • Fresh herbs enhance the flavor.
