Ingredients

  • 6 large eggs hard-boiled and chopped
  • ¼ cup celery finely chopped
  • 2 tablespoons red onion finely diced
  • Dressing
  • cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Topping
  • 1 tablespoon parsley chopped
  • 1 tablespoon chives chopped

Method
 

  1. Chop the hard-boiled eggs into small pieces.
  2. Dice celery and onion finely.
  3. Mix mayonnaise, mustard, lemon juice, salt, and pepper.
  4. Combine eggs, vegetables, and dressing in a bowl.
  5. Stir gently and chill before serving.
