Ingredients
  

  • Base
  • 3 cups cooked chicken breast diced or shredded
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Filling
  • ¾ cup mayonnaise
  • 2 tablespoons Greek yogurt or sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Topping / Mix-Ins
  • ½ cup celery chopped
  • ¼ cup red onion diced
  • ¼ cup grapes or apples chopped
  • 2 tablespoons fresh parsley

Method
 

  1. Dice or shred cooked chicken and place it in a mixing bowl.
  2. In another bowl whisk together mayonnaise, yogurt, mustard, and lemon juice until smooth.
  3. Add celery, onion, fruit, and parsley to the chicken.
  4. Pour the dressing over the mixture and gently fold until evenly coated.
  5. Season with salt and pepper and chill for 30 minutes before serving.

Notes

  • Store leftovers in the refrigerator for up to 4 days.
  • Avoid freezing because the creamy dressing may separate.
  • Add nuts or dried fruit for extra texture.
  • Greek yogurt can replace part of the mayonnaise for a lighter version.
