  • 3 cups cooked chicken breast shredded
  • ½ cup celery diced

  • ¼ cup chopped parsley
  • Dressing
  • ¾ cup mayonnaise
  • 2 tbsp Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional Toppings
  • ½ cup halved grapes
  • ¼ cup sliced almonds
  • ¼ cup dried cranberries

Method
 

  1. Shred or chop cooked chicken into bite-sized pieces.
  2. Dice celery and onion into small pieces.
  3. In a bowl, whisk mayonnaise, yogurt, mustard, lemon juice, and seasonings.
  4. Combine chicken and vegetables in a large bowl.
  5. Add the dressing and mix gently until evenly coated.
