Ingredients
  

  • Base
  • 3 cups cooked pasta or rice
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Filling
  • 2 cups cooked shredded chicken
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • Topping / Sauce
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese
  • ¼ cup parmesan cheese
  • 1 tablespoon parsley

Method
 

  1. Cook pasta or rice until tender and set aside.
  2. Sauté onion and garlic in olive oil and butter until fragrant.
  3. Add chicken, broccoli, and mushrooms and cook briefly.
  4. Stir in cream and half of the cheese until smooth.
  5. Combine with pasta or rice and transfer to a baking dish.
  6. Sprinkle remaining cheese on top and bake until golden.

Notes

  • Store leftovers in the fridge for up to 4 days.
  • Freeze the casserole for up to 2 months.
  • Add breadcrumbs for a crunchy topping.
  • Rotisserie chicken works perfectly in this recipe.
