Method
- Heat olive oil in a skillet and sauté onions until soft. Add garlic and cook briefly.
- In a bowl mix ground chicken, sautéed onion mixture, breadcrumbs, egg, parmesan, and seasonings.
- Shape mixture into patties or meatballs.
- Cook in skillet until golden and fully cooked.
- Add marinara sauce and mozzarella. Simmer until cheese melts and sauce bubbles.
Notes
- Store leftovers in the refrigerator for up to 4 days.
- Freeze cooked portions for up to 2 months.
- If mixture is too soft add extra breadcrumbs.
- Fresh herbs improve flavor and aroma.
