Ingredients
  

  • Base
  • 1 lb beef stew meat cut into small cubes
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Filling
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • Topping / Broth
  • 6 cups beef broth
  • ¾ cup pearl barley
  • 1 cup diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf

Method
 

  1. Brown beef cubes in olive oil in a large pot.
  2. Add onion, garlic, carrots, and celery and cook until softened.
  3. Pour in beef broth and diced tomatoes.
  4. Stir in barley, tomato paste, and seasonings.
  5. Simmer until beef and barley are tender.
