Creamy Vegetarian Baked Pasta

Ingredients
  

  • Base
  • 3 cups cooked pasta
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • ½ cup bell peppers
  • ½ cup onion
  • Filling
  • 1 ½ cups heavy cream
  • 1 cup milk
  • 1 cup mozzarella cheese
  • ½ cup parmesan cheese
  • 2 cloves garlic
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • Topping
  • ¾ cup mozzarella cheese
  • ½ cup breadcrumbs
  • 2 tbsp melted butter
  • 2 tbsp parsley

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta until al dente and drain.
  3. Sauté vegetables until slightly tender.
  4. Prepare creamy sauce with cream, milk, cheese, garlic, and seasonings.
  5. Mix pasta, vegetables, and sauce in a baking dish.
  6. Add topping and bake 20–25 minutes until golden.
  7. Rest 5–10 minutes before serving.

Notes

  • Store leftovers in the fridge for 3–4 days.
  • Freeze up to 2 months.
  • Add extra vegetables if desired.
  • Let pasta cool slightly before serving.
