Ingredients
  

  • Base
  • 20 oz cheese tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red bell pepper diced
  • ¼ cup red onion chopped
  • ½ cup black olives sliced
  • Dressing
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • Topping
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley chopped
  • ¼ cup mozzarella pearls optional

Method
 

  1. Cook tortellini in salted boiling water according to package instructions. Drain and cool.
  2. Chop tomatoes, cucumber, bell pepper, and onion into small pieces.
  3. In a bowl, whisk together mayonnaise, sour cream, olive oil, vinegar, mustard, and seasonings.
  4. Combine cooled tortellini, vegetables, and olives in a large bowl.
  5. Pour dressing over the salad and toss gently until evenly coated.
  6. Top with Parmesan cheese and parsley, then chill before serving.

Notes

  • Chill the salad for at least 30 minutes for best flavor.
  • Add grilled chicken or salami for extra protein.
  • If the salad thickens after chilling, mix in a little olive oil.
  • Fresh tortellini gives the best texture.
