  • 2 tbsp butter
  • 1 onion chopped
  • 3 cloves garlic
  • Filling
  • 3 cups pumpkin puree
  • 4 cups vegetable broth
  • Topping
  • 1 cup heavy cream
  • Salt & pepper
  • Optional spices

Method
 

  1. Melt butter and sauté onion until soft.
  2. Add garlic and cook briefly.
  3. Stir in pumpkin and broth.
  4. Simmer for 10–15 minutes.
  5. Blend until smooth and add cream.
