Ingredients
  

  • For the Pasta
  • 400 g 14 oz fettuccine or penne
  • 1 tablespoon salt
  • For the Creamy Sauce
  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg optional
  • For Add-Ins & Garnish
  • 1 cup cooked chicken diced
  • 1/2 cup sun-dried tomatoes chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup mozzarella cheese

Method
 

  1. Cook pasta in salted water until al dente; reserve 1/4 cup pasta water and drain.
  2. Melt butter, sauté garlic for 30 seconds, then add cream and simmer.
  3. Stir in Parmesan, pepper, and nutmeg until smooth; adjust with pasta water if needed.
  4. Toss pasta into sauce, add chicken or sun-dried tomatoes if desired.
  5. Garnish with parsley and extra cheese; serve warm.

Notes

  • Store in an airtight container in the fridge for up to 3 days.
  • Freeze portions for up to 2 months.
  • Reheat gently with a splash of cream to restore texture.
  • Customize with mushrooms, spinach, or seasonal veggies.
