Ingredients
  

  • Base
  • 1 ½ cups orzo pasta
  • 4 cups water
  • 1 tsp salt
  • Filling
  • 1 cup cherry tomatoes halved
  • 1 small cucumber diced
  • ½ cup red onion chopped
  • ½ cup bell peppers chopped
  • ¼ cup parsley chopped
  • ¼ cup feta cheese
  • Dressing
  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 garlic clove minced
  • Salt & pepper to taste

Method
 

  1. Cook orzo in salted water until tender, then drain and cool.
  2. Chop all vegetables evenly.
  3. Whisk dressing ingredients until smooth.
  4. Combine orzo, veggies, and feta in a bowl.
  5. Pour dressing, toss gently, and chill before serving.
