Ingredients
  

  • Base
  • 2 tbsp butter
  • 1 onion chopped
  • 3 cloves garlic
  • Filling
  • 3 cups mushrooms sliced
  • 4 cups vegetable broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp thyme
  • Topping
  • 1 cup heavy cream
  • 2 tbsp parsley

Method
 

  1. Melt butter and sauté onion until soft. Add garlic.
  2. Add mushrooms and cook until tender.
  3. Pour in broth and seasonings. Simmer.
  4. Blend until smooth.
  5. Stir in cream and garnish before ser

Notes

  • Add cream at the end for best texture
  • Store leftovers in fridge up to 4 days
  • Freeze without cream for longer storage
  • Adjust thickness with broth if needed
