Ingredients
  

  • Base/Broth
  • 4 cups chicken or vegetable broth
  • 1 28 oz can crushed tomatoes
  • 2 cloves garlic minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes
  • Salt & black pepper
  • Filling
  • 1 lb ground beef or Italian sausage
  • 1 medium onion finely chopped
  • 1 carrot grated
  • 1 celery stalk diced
  • 1 tsp garlic powder
  • Noodles & Cheese
  • 8 oz lasagna noodles broken
  • 1 cup ricotta
  • 1 cup shredded mozzarella
  • ½ cup Parmesan

Method
 

  1. Sauté meat and aromatics until fragrant and browned.
  2. Add broth, tomatoes, and herbs; simmer 15–20 min.
  3. Stir in broken noodles; cook until tender.
  4. Mix in ricotta and mozzarella until creamy.
  5. Top with Parmesan; cool slightly before serving.

Notes

  • Store in fridge up to 4 days.
  • Freeze without noodles; add fresh when reheating.
  • Avoid overcooking noodles for best texture.
  • Customize with vegetables or seasonal herbs.
