Ingredients
  

  • Base
  • 12 oz 340g rotini pasta
  • 1 teaspoon salt for boiling water
  • Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion finely chopped
  • ½ cup bell peppers chopped
  • Creamy Dressing
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • Add-Ins Optional
  • ½ cup shredded cheddar cheese
  • ¼ cup fresh parsley chopped
  • ½ cup sweet corn
  • ½ cup cooked shredded chicken for protein version

Method
 

  1. Cook pasta until just tender. Drain and cool completely.
  2. Whisk dressing ingredients until smooth and creamy.
  3. Toss pasta with dressing until evenly coated.
  4. Fold in vegetables and cheese gently.
  5. Chill for at least 1 hour before serving.

Notes

Store in refrigerator up to 4 days.
Do not freeze.
Add protein for a heartier variation.
Stir before serving to refresh texture.
