Ingredients
  

  • Base
  • 2 cups long-grain white rice
  • 2 tablespoons olive oil or butter
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • Filling
  • 2 cups cooked chicken breast shredded
  • 4 cups chicken broth
  • 1 cup whole milk or light cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • Topping
  • 2 tablespoons chopped parsley
  • ¼ cup grated parmesan cheese
  • Double or triple ingredients for 2x or 3x servings.

Method
 

  1. Heat olive oil in a pot and sauté onion until soft. Add garlic and cook until fragrant.
  2. Stir in the rice and toast briefly for about 1–2 minutes.
  3. Add chicken broth, milk, chicken, and seasonings. Stir gently.
  4. Cover and cook on low heat for 15–18 minutes until the rice is tender.
  5. Let the dish rest for 5 minutes, then fluff with a fork.
  6. Garnish with parsley and parmesan before serving.

  • Add a splash of broth when reheating to maintain creaminess.
  • Rotisserie chicken works perfectly for quick preparation.
  • Avoid stirring too often while cooking to keep rice fluffy.
