Ingredients
  

  • Base
  • 2 tbsp butter
  • 1 onion chopped
  • 3 garlic cloves
  • Soup
  • 2 cups gnocchi
  • 1 cup carrots
  • 1 cup spinach
  • 4 cups broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp thyme
  • Topping
  • 1 cup heavy cream
  • ½ cup parmesan cheese
  • 2 tbsp parsley

Method
 

  1. Melt butter and sauté onion and garlic.
  2. Add broth and carrots; simmer.
  3. Add gnocchi and cook until floating.
  4. Stir in cream and cheese.
  5. Add spinach, cook briefly, and serve.

Notes

  • Add cream at low heat to avoid curdling
  • Use fresh parmesan for best taste
  • Adjust thickness with broth
  • Add protein like chicken if desired
