Ingredients
  

  • Base
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 garlic cloves
  • Filling
  • 1 cup coconut milk
  • ½ cup vegetable broth
  • 2 cups cooked pasta/rice
  • cups protein
  • Topping
  • Fresh herbs
  • Chili flakes
  • Lemon zest

Method
 

  1. Heat oil and sauté onion until soft.
  2. Add garlic and cook until fragrant.
  3. Stir in vegetables and cook until tender.
  4. Add coconut milk and broth, simmer gently.
  5. Mix in pasta/rice and protein, stir well.
  6. Garnish and serve warm.

Notes

  • Store leftovers in fridge up to 4 days
  • Add broth when reheating
  • Swap coconut milk if desired
