Method
- Heat oil and sauté onion until soft.
- Add garlic and cook until fragrant.
- Stir in vegetables and cook until tender.
- Add coconut milk and broth, simmer gently.
- Mix in pasta/rice and protein, stir well.
- Garnish and serve warm.
Notes
- Store leftovers in fridge up to 4 days
- Add broth when reheating
- Swap coconut milk if desired
- Avoid overheating sauce
