Method
- Add butter, onion, and garlic to crockpot.
- Pour in broth and add vegetables and seasonings.
- Cook on low for 6–7 hours or high for 3–4 hours.
- Stir in cream and cheese; cook 20 minutes more.
- Garnish and serve warm.
Notes
- Add cream at the end to avoid curdling
- Mash potatoes slightly for thicker texture
- Store leftovers in fridge up to 4 days
- Swap cream for milk if needed
