Ingredients
  

  • Base
  • 3 tbsp butter
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • Filling
  • 4 medium potatoes diced
  • 1 cup carrots sliced
  • 1 cup celery chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp thyme
  • 1 tsp parsley
  • Topping / Finish
  • 1 cup heavy cream
  • ½ cup cheddar cheese
  • 2 tbsp fresh parsley

Method
 

  1. Add butter, onion, and garlic to crockpot.
  2. Pour in broth and add vegetables and seasonings.
  3. Cook on low for 6–7 hours or high for 3–4 hours.
  4. Stir in cream and cheese; cook 20 minutes more.
  5. Garnish and serve warm.

Notes

  • Add cream at the end to avoid curdling
  • Mash potatoes slightly for thicker texture
  • Store leftovers in fridge up to 4 days
  • Swap cream for milk if needed
