Ingredients
  

  • Base
  • 2 cups long-grain white rice
  • 4 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • Filling
  • 2 cups cooked shredded chicken
  • 1 cup diced carrots
  • 1 cup peas
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Topping / Sauce
  • ½ cup heavy cream
  • ½ cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 tablespoon chopped parsley

Method
 

  1. Rinse rice and cook with broth, olive oil, and salt until fluffy.
  2. In a skillet, sauté onion and garlic in butter until fragrant.
  3. Add carrots, peas, and chicken, cooking until heated through.
  4. Stir in heavy cream and cheese until a creamy sauce forms.
  5. Fold cooked rice into the mixture and garnish with parsley.

Notes

  • Store leftovers in the refrigerator for up to 4 days.
  • Add vegetables like mushrooms or bell peppers for variation.
  • Add a splash of broth when reheating to restore moisture.
  • Brown rice can be substituted but requires longer cooking.
